Lamb Trotters (Paya)
Sprinkle flour & salt , scrape scrub or give them a pedicure in human terms.
Remove all callous, hair etc
Soak again in hot boiling water adding salt which will disinfect the trotters.
I did this procedure at least 3 times then giving a final rinse.
In a pressure cooker add water and the following ingredients
And finally the lamb trotters
Close lid tight and bring to boil 40 -60 minutes once the hissing has started
Fry sliced onions with cinnamon bark, cumin seeds , cloves ,peeper seeds and cardamon seeds
To this add chopped tomato, ginger/ garlic & tomato purée.
Then add turmeric, cumin, pepper garam masala powder and salt to taste.
Chopped coriander for garnish with lemon
Braise this mix until desired aroma and texture.
Add the boiled Paya with 2 tbs of oats and water .
Let this simmer until you have the desired consistency
Garnish with coriander and lemon
